Avocado Feta Dip - Caroline Fossi

Ingredients:

large, ripe avocado, diced
2
plum (Roma) tomatoes, diced
1/4 c. red onion, chopped (I usually leave this out because I'm not a huge
raw onion fan)
1
clove garlic, minced
1
T parsley (I used dried, but I'm sure fresh would be good)
1/2 tsp. oregano
1
T olive oil
2
T red wine vinegar
1
4-6 oz. package feta cheese (plain or flavored)
Mix all ingredients and serve with pita wedges or other chips.
