Key Lime Cake - Sandy Bray

 

Ingredients

1 package Duncan Hines Lemon Supreme cake mix

1/2 cup water

1/2 cup key lime juice or lime juice

Zest of 3 key limes or 1 regular lime

1-3 oz package lime jello

1/2 cup vegetable oil

4 eggs, slightly beaten

Frosting:

1/4 pound butter or margarine, softened

1-8 oz package of cream cheese, softened

1 tsp vanilla extract

1-1 pound box confectioner's sugar

1 to 2 tablespooons of milk

Using an electric mixer, blend ingredients together until well combined, about 3 minutes.  Pour into a greased 9" X 13" X 2" baking pan.  Bake for 45 minutes at 350 degrees until a toothpick inserted comes out dry.

To prepare the frosting, use an electric mixer to combine butter, cream cheese, vanilla, confectioners sugar.  Blend until smooth and creamy, then add milk to reach the desired consistency if needed.  Spread frosting over cake and grate lime over frosting .
